The most revered of the Chinese white teas from Fuding County, Fujian. Top leaf shoots of the Da Bai cultivar plucked between late March and early April, before the juvenile buds can mature into leaves. The name Baihao Yinzhen, or White Hair Silver Needle, comes from the silvery white down which envelops the buds as they emerge in spring. Second and third steepings bring out the tea’s full flavour with peach and honeysuckle notes.
